  • Oleo-Test is a reliable and rapid method that measures the concentration of total polar compounds in frying oils.
  • Oleo-Test allows you to control the quality of frying oils in a quick and reliable way, since although the oil does not show signs of degradation, the fact of having used it, even just once, in a poorly calibrated fryer, increases the percentage of polar compounds, exceeding the legal limit.
  • It allows a reliable evaluation of the quality of frying oils (sunflower oil, soybean oil, corn oil and peanut oil) to be carried out in a few minutes and in a very simple way, without the need for sophisticated equipment or instruments.
  • Designed for the food industry in general, restaurants, hotels, catering, etc.
  • The tubes contain a reagent that changes color upon contact with the oil depending on the percentage of compounds.
  • The shade remains stable after use and it is recommended to keep the tubes marked with the date of the sample, as an integral part of the self-control system.
  • During the frying process, fats or oils are exposed to atmospheric oxygen, humidity and very high temperatures (above 160ºC) for long periods of time.
  • As a consequence, the oil degrades and a series of chemical reactions take place that produce various harmful compounds and that in turn alter the organoleptic characteristics (smell, color, flavor) and even the healthiness of the fat and oil.
  • Among these substances are polar compounds and their control allows the degree of oxidation of the oil to be assessed.
  • Current legislation prohibits the marketing of foods that have been prepared or have been in contact with oils that contain 25% of these polar compounds.
